Best Fast Food Breakfast Ever
I like to think I do a good job getting my kids a decent breakfast. We cook steel-cut oatmeal most days, sometimes with a side of scrambled eggs and toast. On my really good days, the toast is from homemade bread.
But not all days are good, and I have spent so many mornings mentally thanking Alice Currah of PBS's Kitchen Explorers for coming up with a home version of "Egg Muffin Sandwiches," a solid breakfast that I can prepare in under 90 seconds. The kids can eat it, if necessary, while running to the bus stop. Yes, some days it comes to that.
The idea is super-simple. The recipe is technically here, but it involves toasting an English muffin, shredding a little cheese, and microwaving an egg. The final product also tastes good enough that (1) my kids have started asking for them even on days when we're not in a rush, and (2) I've started making them for myself too. The experience has made me joke with Alice that she should write one of those single-subject cookbooks devoted to the egg sandwich in all its infinite variations. I've been topping ours with a slice of Canadian bacon for my more carnivorous son, and I can imagine vegged-up versions featuring sauteed spinach, or slices of summer tomatoes, or other ways to gild the muffin lily. One commenter on Alice's blog suggested whole grain bread instead of English muffins.
The key, though is the microwave. It gets dissed at times, but it sure comes in handy for these. Should we add it to the list of underappreciated kitchen tools? Wait, what else would be on that list?

Great idea. I have not tried this recipe but I am wondering how she got her egg to come out all in one piece, nice and neat? She did not grease the dish. Was is a special type of container (one of the new nonstick type)?

Thanks for the comments! June, I don't think this was a nonstick container. I make mine in a teacup, and they come out quite neatly too.

Thanks for the reply. I made one this morning, but I greased the bowl with butter...after all, I don't want to get too healthy.

(If you're just saying that you disagree about this being the best fast food breakfast ever, then we've just gotta disagree.)
