Yes, It IS National Fill-In-The-Blank Day!

51aqGJBFgeL._SL500_AA300_ I'm as happy to celebrate Pie Day as anyone, but has it ever seemed as though every morning marks another national something-or-other day? 

It has? Good. You're not dreaming. There is, we now know, at least one food item celebrated with an official holiday every day of the year. We know this because they're now collected in "Food Fest 365," a new book by Yvan Lemoine (a.k.a. "that guy from The Food Network's "Chopped").

May 20? Quiche Lorraine Day. Scrapple gets Nov. 9. June 23 is for Pecan Sandies. We've just missed Curried Chicken Day (Jan. 12), but Crab-Stufed Flounder Day is coming up (Feb. 18). If you could use some Bicarbonate of Soda after all that, its day was back on Dec. 30. And yes, Lemoime offers a recipe for each, along with some good-natured chatter. I would have liked to see information about the genesis of each day as well, but I may be in the minority there.

So what day is next? Glad you asked. Feb. 3 is Carrot Cake Day. Wait one more and you're on to Stuffed Mushroom Day. Here's Lemoine's recipe for the former, which includes carrot baby food "to enhance the carrot flavor". And hey, it's apparently also Wedding Ring Day. Maybe someone can combine the two?

Carrot Cake

Ingredients:

3 1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup light brown sugar
2 teaspoons cinnamon
3/4 cup lowfat plain yogurt
3 eggs
5 ounces carrot baby food
3 cups finely shredded carrot
1 cup pecans, toasted and chopped
3/4 cup vegetable oil

Directions:

1. Preheat oven to 350 degrees.

2. Sift all dry ingredients except pecans. Make a well in the middle and pour in all remaining ingredients except oil. Combine.

3. Add oil and mix well.

4. Oil and flour a 9x12-inch baking pan and pour in batter. Bake for 45 minutes or until a knife comes out clean when inserted in the middle. Serve warm.

Serves 6

I love carrot cake and am going to give this recipe a try. Thanks for sharing : )

im not that good in baking but i love experimenting..wanna try this healthy cake...wish me luck...thanks for sharing...
