Huckleberry Apple Pie for Independence Day
Happy Independence Day to all!
We are having a little barbecue tonight and I will be serving Huckleberry Apple Pie for dessert this evening. Last night, I made Kate McDermott's wonderful pie dough and stashed it in the fridge.
This morning, I rolled the pastry on the pastry cloth made by Kate. I then fitted the dough into my Emile Henry pie dish. I loaded the pan with chopped apples and a couple heaping spoons of some Wild Montana Huckleberry Pie Filling that I purchased on Friday afternoon while we were driving through the wonderful state of Montana. I topped the pan with another round of dough and crimped the edges accordingly.
My pie has emerged from the oven and looks pretty good. We can't wait to dig in this evening!
