Smoked Salmon and Baby Spinach Salad
There are probably many variations of this salad to indulge your appetite. This is one I throw together when I've had a long day and need to get dinner on the table in a flash. The ingredients are items that I nearly always have in my refrigerator so it's a good stand-by.
Recently, someone in my household accidentally put my salad spinner in the dishwasher where the bowl melted to an unusable, though beautiful plastic blob. So, I had the opportunity to acquire a new one. I chose the Progressive collapsible salad spinner and was terribly impressed with both the operation and storage of this kitchen tool. It collapses to 6-inches tall, making it easy to stack in cramped kitchen cupboards like mine. 
Assembling is a snap and it dries your lettuce or spinach quite nicely. Plus, all parts, excluding the lid, are dishwasher safe. As an aside, my 2-year-old was highly entertained by pulling the cord and making the basket spin. While he was doing that I assembled the other ingredients.
Smoked Salmon and Baby Spinach Salad
Ingredients:
5-ounces baby spinach
4-ounces smoked salmon
4 hard-boiled eggs
2 tablespoons capers
1/2 English cucumber
Olive oil and vinegar dressing
Directions:
1. Wash and dry your spinach in a salad spinner.
2. Meanwhile, hard-boil your eggs and chop them into uneven chunks.
3. Chop up the remaining ingredients and toss them in a salad bowl.
4. Mix up your favorite olive oil and vinegar dressing.
5. Toss the salad with the dressing and serve with a delicious bread.

Wish you had a picture of the finished product, if only to tease me. I've got fresh spinach ready for picking. I like simple meals like this on those nights when you want something to come together without a fuss.

That sounds great! I love spinach salads, and usually have most of these ingredients on hand. I'll have to give this a try soon. :)

I wish my photography skills were good enough to warrant posting actual photos. Sadly, the food always looks unappetizing when I do home shots. I guess there's a reason people pay food photographers.
