Amy Pennington's Urban Pantry hits the bookshelves April 15, a tasty collection of seasonal and sustainable recipes that can be prepared using staples pulled from the cupboard. Well, providing you've got a well-stocked Urban Pantry.
Amy, who has a thriving urban growing business called Go Go Green Garden, lives near Lake Union in Seattle. From her picture windows, she can watch float planes land and take off and sailboats glide by. Her deck is covered in tender plant starts and inside, in her well-stocked cupboards are signs of the fruits of last year's labor. Preserves and jams look so pretty, but so does the rest of her foodstuffs: Dried beans, flour, sugars and spices.
She buys everything in bulk and stores them in glass jars. Ah-ha! That makes so much sense. Inspiration pops every time you open the doors when you can easily see what's on hand. She had whipped up a fruit crisp using staples that very morning.
I got so jazzed when she took me on a tour of her tiny galley kitchen (Click here for the video tour), I came home and started re-organizing my staples, moving them into jars. It's also a great way to make use of tight spaces. And, what cook ever thinks they have enough space?
It might take a bit of heavy lifting to get a pantry well-stocked and organized, but it's so worth it when you can pull dinner together from what you've got on hand. You can tell a lot about a person depending on what they've got on their shelves. What are your favorite staples?

If you have a well stocked pantry your job of rustling up something would be much easier. Especially if you filled it in the summer with all the chutneys, conserves, jams and jarred tomatoes and pickles.
