Extra Fancy Award Show Popcorn

This Sunday is Hollywood's big night and I'm going to take the opportunity to live large. I plan to change out of my pajamas and into my sweats to watch this year's Oscar® nominees parade down the red carpet, and I'll be eating this Extra Fancy Award Show Popcorn while I cheer the Hurt Locker on to victory. The earthiness of the infused truffle oil and the sharpness of the Parmigiano make this a decadent treat. I made it for dinner the other night, and ate the whole bowl. Just me.

Extra Fancy Award Show Popcorn

Ingredients:

3 tablespoons vegetable oil
1/2 cup popcorn kernels
3 tablespoons unsalted butter, melted
2 tablespoons truffle oil
1/2 cup grated Parmigiano Reggiano, grated
coarse salt to taste

Directions:

1. Place the oil, popcorn in a 6-quart saucepan on medium heat. Cover.

2. Gently shake the covered pan until the popcorn finishes popping, approximately 3 minutes.

3. Remove from the heat.

4. Place popped corn in a mixing bowl. Drizzle with melted butter and truffle oil. Add Parmigiano Reggiano and salt. Toss to mix.

5. Enjoy!
