Extra Fancy Award Show Popcorn
Ingredients:
3 tablespoons vegetable oil1/2 cup popcorn kernels
3 tablespoons unsalted butter, melted
2 tablespoons truffle oil
1/2 cup grated Parmigiano Reggiano, grated
coarse salt to taste
Directions:
1. Place the oil, popcorn in a 6-quart saucepan on medium heat. Cover.
2. Gently shake the covered pan until the popcorn finishes popping, approximately 3 minutes.
3. Remove from the heat.
4. Place popped corn in a mixing bowl. Drizzle with melted butter and truffle oil. Add Parmigiano Reggiano and salt. Toss to mix.
5. Enjoy!

When I'm feeling decadent, I sprinkle on parm and sometimes truffle salt. When I'm feeling guilty, I make popcorn with no butter or cheese, instead spending a few extra minutes ahead of time to infuse olive oil with rosemary and/or garlic... then pop using that oil. A dust of sea salt at the end is all it needs, especially if you get a good quality popcorn.
That's the most important part, I think -- getting a good quality popcorn. Forget the grocery store stuff and order online from places that carry different varietals or (like I did last time) from the boy scouts who were selling specialty popcorn.

an amazing variation... Top it with lightly browned butter with rosemary in it. Then microwave each serving for a few seconds with some shredded parmesan over the top; just enough to melt the parmesan. You'll never go back...

There is NO way you can make good popcorn without coconut oil. Tastes like its fresh from the lobby of your favorite theater.

I prefer my Oscar show popcorn with just real butter and fine sea salt, all washed down with a bottle of Sauternes. It doesn't have to be Chateau d'Yquem but still one of the Premiers Crus.

I CAN'T WAIT to try it with the Parmigiano! I have to say though, a little known bit of info-- most truffle oil is synthetic! I say skip the oil unless you get the real stuff (I think Selezione brand is legit) and use truffle salt. Not the same but definitely delicious.
