Mashed Potatoes, Round Two
In the rare event that you have any leftover mashed potatoes from your Christmas dinner (they are among the first dish to be devoured at our table), this is a great way to give them a second life. We used a similar recipe at my restaurant in Capri, but instead of onions we used diced prosciutto, and shaped the croquettes by hand into small logs instead of using an ice cream scoop.
Ingredients:
2 tablespoons of milk
Salt [to taste]
1/2 teaspoon of pepper
1/2 teaspoon of chopped green onion
2 eggs, beaten
3 tablespoons all-purpose flour
4 cups, mashed potatoes
1 egg, beaten
Sifted, dried breadcrumbs
Peanut oil, enough to fill pan 1/2-inch
Directions:
1. Add milk, salt, pepper, chopped onion, [2] beaten eggs, and flour to mashed potatoes.
2. Chill and then shape with an ice cream scoop.
3. Dip in [the remaining] beaten egg, [then roll in] the breadcrumbs.
4. Fry each croquette in shallow oil until brown on all sides.
Cook's note: Cook in small batches, giving each croquette at least two inches of space around it, not to overcrowd the pan. This prevents the croquettes from crumbling while frying.
