Four Decadent Ways to Recycle Panettone

The twenty-fifth of December comes but once a year, however, so what to do with all of the leftovers? (If your house is like mine, we have three or four of these lovely confections strewn about the dining room.) The brioche-like consistency of the bread lends itself particularly well to bread pudding and french toast, elevating those classic comfort dishes to another level of melt-in-your-mouth goodness. Here are some suggestions for recycling your golden domes from Giada De Laurentiis, Ina Garten, and Michael Chiarello:
Panettone Bread Pudding
Panettone French Toast
Panettone Stuffing
Panettone Trifle
Don't stop there, though. Let your creativity run wild. I think I might try a variation on croque monsieur. What do you do with your leftover panettone? Let me know.

Panettone actually makes the best croutons...
Once it has dried out a bit (a few days after christmas...), just cut it into cubes, toss in a bowl with
good olive oil salt and pepper, and bake in the oven in a single layer until they are nice and golden and
crunchy. So good on salads or in soups with that little surpirse sweetness of the raisins and such.
They're really great, though im sure not quite as great as prosecco at midnite mass.
