Chili Verde Helps Christen Pretty New Pot
I stewed long and hard about what would be the first dish I would make in it. A simple soup just wouldn't do. I wanted it to be memorable.
Then, I took a trip to Walla Walla for a weekend of wine tasting and picked up the most beautiful pork roast at Thundering Hooves, a small operation that focuses on pasture-finished meats.
This small bone-in shoulder fit perfectly in the oven-ready pot. I covered it with salsa verde (tomatillos simmered briefly in water with a chopped jalapeno and several cloves of garlic and then pureed with an immersion blender) and cooked it low and slow, in a 300-degree oven for four hours. The kitchen smelled wonderful as the pork roasted.
It turned out so moist and flavorful. I served it shredded with rice and beans and corn tortillas. The family showered me with compliments, but I felt a little guilty. My new pot had done all the heavy lifting.
Can't wait to continue putting it to the test.

Besides an apple do you have other designs and colors with the enamel? I have so ideas~~~
