Fig Pie? You Mean Pizza Pie!

Fig-and-prosciutto-pizza The Italian appetizer of prosciutto and figs is standard fare at our house during fig season. We like figs any way we can get them, and this evening we had figs the way my husband likes best, on pizza!

Now I've never seen this in Italy, but our favorite pizza parlor in Seattle, Tutta Bella, offers a Calabrese pizza this time of year when figs are ripe and plentiful. Made on an olive oil base, the Calabrese is topped with fresh Mission figs, prosciutto, goat cheese and rosemary, then drizzled with a balsamic vinegar reduction. It takes prosciutto and figs to a whole new level!
