New Kiwi Gold

Kiwi-2 I love kiwifruit, the fuzzy, New Zealand import with the bright green flesh and crunchy black seeds. Today, wandering through a health and fitness fair at the local mall, I was introduced to a new type of kiwi, a hairless version with the same crunchy seeds, but now with bright yellow flesh. More mellow than the original tangy kiwi, both are said to have the potassium of a banana, twice the vitamin C of an orange, and as much fiber as a bowl of bran flakes. It's delicious too!

You can find lots of recipes for kiwi, including this one for gold kiwi gelato. But you really don't have to do anything elaborate to kiwifruit to enjoy them.  Perhaps the most spectacular way to serve kiwi may be the simplest: pile a large platter with kiwi halves, then invite your guests to scoop out the flesh and savor the flavor.

Gold Kiwifruit Gelato

Ingredients:
2 gold kiwifruit, peeled and sliced
1/2 to 1 cup sugar to taste
2 teaspoons vanilla extract
1-1/2 cup milk

Directions:
1. Slice kiwifruit into halves and spoon the fruit out into a blender of food processor.

2. Add the sugar and blend until smooth, taking care not to crush the kiwifruit seeds, as this can make your gelato bitter.

3. Add the vanilla and the milk and continue pulsing until well mixed.

4. Freeze in an electric ice cream maker according to the manufacturer's instructions. Alternatively, freeze in a bowl, until almost solid. Beat well with an electric beater, then freeze until solid. Store in a covered container in the deep freeze.

Makes 4-6 servings.

Sounds great!
How exactly can you be "taking care not to crush the kiwifruit seeds"?

Simply slice or dice the ripe kiwifruit. Place in a blender or food processor and pulse, just until processed (smooth or slightly chunky depending on how you'd like it.) The seeds do not crush easily, only when over-processed. Once you've done this once, it will be a breeze. Enjoy!
