Shaved Ice: Filipino Halo-halo
I love frosty confections, and now that the weather has turned hot I've been on the look-out for all manners of shaved ice, especially the wonderful Asian variations, from Filipino halo-halo to Korean bingsu to Japanese kakigori.
Over the weekend I stopped off at Inay's Asian Pacific Cuisine in Seattle for a cold dose of deliciousness, Filipino style. Halo-halo begins with shaved ice and is topped with a huge assortment of fruits and sweet treats. Inay's version includes house sweetened red beans, white beans, bananas and jackfruit, coconut meat, and scoops of flan and jello all covered with evaporated milk and topped with taro ice cream.
Unlike a hot fudge sundae that you gingerly tuck into with a spoon, when it comes to halo-halo those in the know stir the ingredients all together before they dig in. With its exotic mixture of fruits and the ceremonial mixing of ingredients, it's no wonder that "halo-halo" actually means "mix-mix" in Tagalog.
If you can't find halo-halo anywhere around town, you'll be glad to know that inexpensive shaved ice machines now abound and Asian grocery stores often stock all the do-it-yourself fixings. Tayo’y magsikain!
