Vintage Bacon Cheese Cake-Shaped Meatloaf Thing
Back in 1968, Campbell's came up with a brilliant recipe called "Crowning Glory". It calls for three of the major food groups--bacon, cheese (in soup form), and ground beef.
Here's the recipe so you can make it this weekend, take pictures, and send them to us to post next week. And please don't scoff at their paltry three strips of bacon. You have to remember that back in the 60's bacon was a luxury item. At least that's the only thing I can conclude. Why else wouldn't they wrap the entire thing in bacon?
Campbell's Crowning Glory
Ingredients:
1 can Campbell's Cheddar Cheese Soup [is this still around?]
1 1/2 pounds ground beef
1/3 cup finely chopped onion
1/4 cup quick-cooking rice, uncooked
1 egg, slightly beaten
1 teaspoon salt
3 strips bacon, cut in half [I'd say triple this.]
Directions:
1. Combine 1/2 can soup with remaining ingredients except bacon. Mix thoroughly.
2. In shallow baking dish (13x9x2"), shape firmly into ring (2 inches high with 4-inch opening). [Why not use a bunt pan?]
3. Place bacon on ring.
4. Bake at 350 F for 1 hour.
5. Spoon off fat.
6. Top loaf with remaining soup.
7. Bake 5 minutes more.
4 to 6 servings

I don't understand. What's the point of step 5, "Spoon off fat"??

My mom used to make this when we were kids and we HATED it! The bacon was always so rubbery and the globs of cheddar cheese soup grossed us out!
