Reader Recipe: Judy's Soda Cracker Toffee
Thanks again to all who submitted recipes for homemade gifts! We hope you enjoyed the first Reader Recipe yesterday--Rosemary Salt, from Kalyn's Kitchen. Because we're pushovers for a good recipe, we couldn't resist sharing this submission with you too. It comes from Judy Amster and is an interesting and easy take on toffee! The recipe makes a full jellyroll-size pan of toffee, enough to package up and tie with a bow for lots of friends and family.

Soda Cracker Toffee
Ingredients:
Saltines (enough to fill a 10-by-15-inch jellyroll pan)
1 cup (2 sticks) of butter
1 cup firmly packed brown sugar
1 cup chocolate chips or chopped semisweet chocolate
Directions:
1. Preheat the oven to 375 degrees F. Line the pan with nonstick foil or spray well with Pam.
2. Line the pan with Saltines, fitting tightly. Break pieces to fit any spaces.
3. In a heavy saucepan, combine the butter and brown sugar. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Boil for 3 minutes, still stirring. Remove from the heat and pour evenly over the crackers in the pan.
4. Place the pan in the oven and immediately reduce heat to 350 degrees F. Bake for 7 to 10 minutes, checking to see if it is browning. When light brown and bubbling, remove from the oven and immediately sprinkle the chocolate evenly over the pan. Let stand for 5 minutes and then smooth the chocolate over the toffee. Chill and then break into uneven pieces. Chopped almonds can be pressed onto the chocolate before it sets.

I think I tasted something like this over the summer. The crackers may seem odd to mix with the sweet things, but it was very yummy!

I made this today and it was fantastic and incredibly addictive! I used a few more chocolate chips and also sprinkled roasted, salted almonds (chopped) on top. Salty-sweet goodness! I will definitely be making this again!

i make this only i use graham crackers instead of soda crackers. i make two pans because it's so easy. i sprinkle chopped pecans on the top of one pan, and jimmies on the other pan for people who don't like nuts.
