Almost Edible Photo: Vegetarian Lasagna
I love the veggie lasagna (especially when it’s cold outside), but sometimes find it a little overbearing with the amount of sauce used in most spots. That’s why I was thrilled to make a version last night with fresh pasta, from RP’s Pasta, which doesn’t need to be pre-boiled and which cooks easier (thereby not needing the extra sauce) and, well, just tastes better. This version was made simply with roasted cauliflower (which is dreamy) and carrots, as well as a little arugula and ricotta and mozzarella cheeses (plus some olive oil and spices naturally). I can’t wait to have the leftovers for lunch.
