Pumpkin Pie + Baked Alaska = Dessert Heaven
I am a big, BIG fan of pumpkin pie. BIG. Seriously, when November rolls around each year, I just can't get enough pumpkin pie. Family members will tell you that I've been known to eat an entire pie by myself. Not in one sitting, of course. Though, I suppose it's not out of the question. If it were a small pie, that is.
Anyway, it is important to note that I'm a traditionalist when it comes to pumpkin pie. For Thanksgiving, don't serve me pumpkin cheesecake or any other gussied-up substitute for the classic Turkey-Day pie. However, tonight those pumpkin impostors may have found a way in. I came across the most fascinating pumpkin pie recipe I have ever laid eyes on, and I can't wait to try it! Check out Peggy's Baked Autumn Alaska on Laura's Best Recipes. She takes a classic pumpkin pie and tops it with ice cream and then a heavenly-sounding brown-sugar meringue. Dreamy!
Now, I'm not suggesting I'll make this for The Day. Gotta stick with tradition. It may just be an early-November amuse bouche...
