Paul Kahan at Blackbird has been doing bacon ice cream pretty much since his restaurant opened - and it's GREAT. It's a great lunch dessert after having an app of confit of suckling pig followed by a pork belly sandwich. That's so nice that Lebovitz is borrowing inspiration from a James Beard award winner . . . years later.
