Almost Edible Photo: The Naked Lobster Roll

From flickr, via Lobster Shack in San Francisco. Lobster Shack serves up two versions of this sandwich--one with mayo, called The Maine Lobster Roll, and one without (pictured). Can someone from the east coast explain why lobster needs to be drenched in mayonnaise?

nothing ever needs to be drenched in mayonnaise...

if it's good mayo with the right seasonings, it is sooooo good

I'm not from the East coast, but I can tell you that a proper lobster roll with mayo is one of the most delicious things on earthy. It's all cool and creamy and decadent...Oh, I wish I were in Boston

to Caitlin:

Forget Boston. Maine is where you find GOOD lobster rolls. . .

Why put mayo in a lobster roll? Its the right thing to do.
