Mother's Day Recipes, Day 5: Orange Bread Barbados
I don't really know why this recipe is called Orange Bread Barbados, except maybe that it's so zingy and fresh it makes you feel like you're on a tropical isle. What I do know is that this is a tried-and-true recipe of my mom's, and a can't-miss component of a winning Mother's Day brunch. The bread smells divine while baking, and comes out as a dense, buttery, citrusy tea cake, perfect slathered with butter. Extra bread (if you have any!) is terrific toasted for breakfast or a quick snack. Enjoy!
Orange Bread Barbados
Ingredients:
2 cups flour
1/2 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup orange juice
1/4 cup butter, melted
1 egg, beaten
1 teaspoon grated orange zest
Directions:
1. Preheat oven to 350 degrees F. Mix together flour, sugar, baking powder, and salt. Set aside.
2. Warm orange juice to room temperature or above (this will keep the butter from resolidifying). Whisk in butter, then egg and zest.
3. Fold wet ingredients into dry. Pour into a greased loaf pan and bake for 30 minutes, until set and golden brown around the edges.
Makes 1 loaf.

It's yummy served toasted with lots of butter and orange marmalade and lovely when served with a Mimosa cocktail. I got this recipe out of the Gourmet Magazine "You Asked For It" column many years ago. The requester was served the bread when vacationing in Barbados.

I wished i can actually try to bake this. I'm away from my Mom during Mother's Day and i'm trying to convince my husband that i'll really use the oven if he allows me to buy one haha

Question: Does anyone know how well this bread does frozen and then thawed? I'm looking for some things to take on our beach trip and this may be a candidate.

You should be able to freeze this bread. Once it's completely cooled, wrap it securely in plastic wrap, then wrap it again in heavy-duty foil. I do this with many of my quick breads like this, and they hold up great!
