Tortilla Soup Recipe?
As my Al Dente caballeros know, I am in love with Mexican food. Specifically, spicy salsas, anything wrapped in a corn tortilla, and guacamole. So, my recent honeymoon in Playa del Carmen was not only a vacation for me and my man (Head Chef), but also quite the fiesta for my taste buds.
Our breakfast buffets consisted of tortilla chip pancakes, all-you-can-eat deep-fried bacon, fried plantains, refried beans, fresh salsas, and fresh papaya. For lunch, we ate endless platters of chips and guacamole, and washed it all down with banana monkeys or frozen margaritas. For dinner, we usually started off with tortilla soup and finished up with some other tasty entrée.
Now that I'm back home, I am going through some serious withdrawls. Head-Chef and I have eaten chips and guacamole at least once a day, but what we are really missing is the tortilla soup. There are plenty of recipes on the web for tortilla soup, but I'm looking for a can't-live-another-day-without-this-tortilla-soup soup recipe. Do you, dear readers, have a tortilla soup recipe that you could share? Maybe as a little wedding present for Head Chef and me?

Here is the recipe for Tortilla Soup form the Mansion on Turtle Creek in Dallas. You can also buy it online, though it is pricey. This soup is AWESOME!
Tortilla Soup
Caroline Rose Hunt, creator of Rosewood Hotels and The Mansion on Turtle Creek, enjoyed this soup at the venerable Argyle Club in San Antonio and suggested its adaptation for the menu of The Mansion on Turtle Creek. This hearty soup, which is suitable on warm spring days as well as cold winter nights, has been on the menu since The Mansion on Turtle Creek opened. When Tortilla Soup is ordered, it is brought to the table in a tureen for individual service by the waiter, who garnishes each bowl according to the customer's desire.
3 tbsp. corn oil
2 qts. chicken stock (recipe below)
salt to taste
cayenne pepper to taste
4 corn tortillas, coarsely chopped
1 cooked chicken breast, cut into strips
6 cloves garlic, finely chopped
1 avocado, peeled, seeded, & cubed
1 tbsp. chopped fresh epazote (or 1 tbsp. chopped fresh cilantro)
1 c. shredded cheddar cheese
1 c. fresh onion purée
3 corn tortillas, cut into thin strips & fried crisp
2 c. fresh tomato purée
1 tbsp. cumin powder
2 tsp. chili powder
2 bay leaves
4 tbsp. canned tomato purée
Heat oil in a large saucepan over medium heat. Sauté tortillas with garlic and epazote over medium heat until tortillas are soft. Add onion and fresh tomato purée and bring to a boil. Add cumin, chili powder, bay leaves, canned tomato purée, and chicken stock. Bring to a boil again, then reduce heat to simmer. Add salt and cayenne pepper to taste and cook, stirring frequently, for 30 minutes. Skim fat from surface, if necessary. Strain and pour into warm soup bowls. Garnish each bowl with an equal portion of chicken breast, avocado, shredded cheese, and crisp tortilla strips. Serve immediately. Serves 8-10
Advance Preparation: Soup may be made 1 day ahead and gently reheated before serving.
Chicken Stock:
1 chicken carcass
3 sprigs fresh parsley
2 tbsp. corn, peanut or vegetable oil
1 small bay leaf
1 c. coarsely chopped onion
1 tbsp. white pepper corn
3/4 c. coarsely chopped carrots
5 c. water to cover
3/4 c. coarsely chopped celery
3 sprigs fresh thyme
Have butcher cut carcass into small pieces or use a cleaver to do so at home. Heat 1 tbsp. in oil in a large saucepan over medium heat. Add carcass. Cook, stirring often, until well browned. Add remaining oil with onion, carrots, and celery. Cook, stirring frequently, until vegetables are golden brown. Pour off oil. Add thyme, parsley, bay leaf, and peppercorns. Stir to blend and add water to cover. Bring to a boil, reduce heat, and simmer about 1 1/2 to 2 hours, skimming surface as necessary, until reduced to 4 cups. Line a bowl with an extra fine sieve (preferably a chinois). Pour mixture into the sieve and strain, pushing solids with a wooden spoon to extract as much liquid as possible. Discard solids. Skim off any surface fat. Refrigerate, tightly sealed, for no more than 2 days, or freeze in small quantities for ease of use for up to 3 months.

CHICKEN TORTILLA SOUP
In a large stockpot combine and whisk together until smooth:
2 cans each of the following Campbell soups: cream of mushroom, cream of chicken soup, cream of celery soup, and cheddar cheese soup.
2 cans (15 oz each) chicken broth
Add:
1 (15 oz.) can diced tomatoes
1 cup Pace brand medium salsa
1 (4.5 oz) can Ortega green chiles
1 medium onion, chopped
1/4 cup fresh,chopped cilantro
4 cloves fresh garlic, minced
1 tsp. red chile powder, more or less to your taste
salt and pepper to your taste
Bring to a full boil, reduce heat and simmer for 1 hour.
Add:
4 cooked chicken breasts, cut into small chunks
Simmer another hour.
While soup is simmering, make your soup toppings:
Cut 1 pkg. flour tortillas into small thin strips and deep fry in hot oil until lightly browned.
Shred 1/2 lb. longhorn style colby cheese
To serve:
Ladle soup into bowls, top with shredded cheese and fried tortilla strips.

Several years back I tried a quick tortilla soup recipe in Bon Appetit. I've adapted it slightly and it's fantastic for an easy weeknight meal. Enjoy!
Ingredients:
4 5- to 6-inch corn tortillas
2 teaspoon olive oil
2 14-1/2-ounce cans low-salt chicken broth
2 cups water
3/4 cups canned Mexican-style stewed tomatoes, with juices, cut up lightly with shears
1 bay leaf
1 garlic clove, pressed
1/4 teaspoon ground cumin
1/8 teaspoon dried crushed red pepper
12 ounces skinless, boneless chicken breast, cut into ½-inch wide strips
1 cup canned corn
2 green onions, sliced
1/2 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
Directions:
1. Preheat oven to 350 degrees F. Brush one side of each tortilla with oil. Cut tortillas in half, then crosswise into 1/4-inch-wide strips. Spread strips on baking sheet and bake until light golden, about 15 minutes. Cool on baking sheet.
2. Combine broth, water, tomatoes, bay leaf, garlic, cumin, and red pepper in large saucepan. Bring to a boil, then reduce heat and simmer 5 minutes.
3. Add chicken strips and corn to pan and simmer until chicken is just cooked through, about 5 minutes.
4. Stir in green onions, cilantro, and lime juice. Season with salt and pepper.
5. Ladle soup into bowls. Sprinkle with tortilla strips and serve immediately.
