Always On My Grocery List: Patak's Madras

In my quest to burn off all of my taste buds, I've become addicted to Patak's Madras cooking sauce. While it used to be only available in specialty stores, I've recently seen it in more mainstream grocery stores. There's a decent recipe on the side of the can, but I've modified it to my liking. Here it is.
Ingredients:
1 pound buffalo steak, cut into bite-sized chunks
1 can red beans
1 small onion, diced
1 can Patak's Madras
Directions:
1. Sautee onions in oil until tender.
2. Add steak, cooking until almost cooked through.
3. Add Patak's and red beans.
4. Turn heat down to a simmer, cover, and cook for about 30 minutes.
5. Serve over basmati rice.

I would add some yogurt to this to make the sauce creamier and to remove some of the heat. Contrary to popular belief, good Indian food is not burn-off-your-tongue hot. It should be spicy and pungent, with some heat but not a lot. That way you can actually taste the myriad combinations of spices that really give Indian food its distinct taste.

Patak's has great Indian products. Their spicy mango chutney is excellent. Patak's is a great line of products to bring India into the comfort of your own home!
