12 Days of Holiday Eats, Day 12: Eggnog Pancakes
I have a number of friends who believe the holidays just aren't complete without eggnog. I'm not the biggest fan, but I'm happy to incorporate it into things I'd be cooking anyway, like the pancakes or waffles you'll usually find in my kitchen on Sunday mornings. Top these with butter and cinnamon and I guarantee you'll have a happy holiday breakfast! This recipe comes from allrecipes.com.
Ingredients
1-1/2 cups all-purpose flour
1 tablespoon sugar
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup eggnog
2 tablespoons clarified butter
1 egg, lightly beaten
Directions
1. Heat a lightly oiled skillet or griddle over medium heat.
2. In a bowl, mix the flour, sugar, baking powder, and salt. Make a well in the center, and pour in the eggnog, butter, and egg. Mix until dry ingredients are evenly moist.
3. Pour 1/4 cup batter onto the hot griddle for each pancake. Cook pancakes until bubbly on top. Flip with a spatula, and continue cooking until lightly browned on bottom.

1) is that any eggnog - homemade or storebought? with or w/o alcohol?
2) can you use this as a waffle batter, or how would you modify it?

Since pancake and waffle batter are so similar, I use this for both. Perhaps add a little extra butter or cooking spray to your waffle iron so they don't stick. Storebought vs. homemade 'nog hasn't made a difference for me, since they tend to have a similar milk content and the booze seems to evaporate when cooked.

Those are some great pancakes and a very good treat for the holiday with everyone being off work they will get a chance to have a great full breakfast but what about lunch? there is this Love Cookbook that i bought off of Amazon.com named 88 Ways to Her Heart Cooking for Lovers each recipe has a love story and a love name and the cool thing about it is the book is set up like a restaurant menu i'm going to give every a recipe to try for the holiday's out of it i know your experience will be as good as mine if not better.

Love 4-A Night Chicken
2/3 cup butter
½ cup dry bread crumbs
3 tbsp. grated parmesan cheese
2 tsp. basil
½ tsp. garlic
2 chicken breast, split
½ cup dry white wine or apple cider juice
¼ cup chopped green onion
¼ cup chopped parsley
Preheat oven to 375 degree in 2 quart sauce pan melt butter on a piece of wax paper combine bread crumbs cheese, basil and garlic salt. Dip chicken breast in melted butter, and then roll in bread crumbs to coat. Place skin side up in ungreased 9 inch square baking dish. Bake in oven at 375 degree for 50 to 60 minutes. While chicken is baking, add wine, onion and parsley to remaining melted butter. When chicken is golden brown, pour butter sauce
Over and around Return to oven for 3 to 5 minutes more or just until sauce is hot serve with sauce lightly poured over good with wild rice?
